
Erythorbic Acid
Formerly known as isoascorbic acid, it is a stereoisomer of ascorbic acid (vitamin C). It is a vegetable derived food additive produced from sucrose. It is widely used as an antioxidant in processed foods. It is a water-soluble antioxidant, used mainly as an ingredient in soft drinks. Erythorbic acid has no known mutagenic or carcinogenic properties, and has not been shown to inhibit the uptake of any vitamins or minerals. Uses: Antioxidant additive in food.
