
Aspartame
Aspartame is the methyl ester of the dipeptide of the natural amino acids L-aspartic acid and L-phenylalanine. As a sweetener, it is trademarked under multiple names and is used worldwide in about 6,000 products. Aspartame is not good for cooking and baking, however, because it breaks down under heat causing it to lose its sweetness.
